the STERILIZATION of food by heating it to a certain TEMPERATURE to destroy potentially harmful BACTERIA . Milk, for example, is heated to 62-65┬░C for 30 minutes, followed by rapid cooling. INFECTIONS avoided by this process include TUBERCULOSIS and TYPHOID , SCARLET FEVER , DIPHTHERIA and FOOD POISONING .
